Keto Lasagna Cups

These low carb lasagna cups are meaty, cheesy, and delicious! Whether you’re on the go or planning dinner for the week, these will become a simple staple in your household. Recipe + photo by @cleaneaterr
What You’ll Need:
-1 bag of Keto and Co Flatbread and Pizza Mix
-3 eggs
-1/2 stick of butter, softened
-1 cup lukewarm water
-1/2 pound of Italian sausage
-1 tsp olive oil
-1 tsp oregano
-1 Tbsp parsley, chopped
-1 cup ricotta cheese
-1/4 cup of fresh parmesan
-1 cup mozzarella cheese, shredded
-1 tsp olive oil
-1 cup of tomato sauce
Cooking Instructions:
- Preheat the oven to 350F and heat a pan over medium-high heat and add in 1 tsp of oil.
- Add the Italian sausage and saute until brown, breaking up as the meat cooks. Drain off excess grease and set it aside.

In a large mixing bowl, mix 1 egg, parsley, oregano, ricotta, and parmesan until just combined.
- In another bowl, combine Keto and Co Flatbread Mix, 1 cup lukewarm water, butter, and 2 eggs and stir until smooth dough forms.
- Evenly distribute your Keto Flatbread dough into the muffin tin. Grab about 2 tbsp and make a cup with your flatbread.
- Fill each dough cup with about 1 ½ tablespoon of ricotta mixture. Top each muffin cup with about 1 tablespoon of the cooked sausage, 1 tablespoon of tomato sauce, and 1-2 tablespoons of the mozzarella cheese.
- Bake for 15-18 minutes, or until the ricotta mixture is set up and the cheese is browned.
- Cool on the cooling rack for 15 minutes and then carefully remove each Lasagna Cup. Allow to cool completely or serve warm.
